Hello and welcome to the grand finale of @thegfw challenge and today's word is "Underneath'. Now, underneath my thumb is a very stressed but finally compliant husband 😂😂. Unfortunately, I can't get him to lie down for the pic, so instead, underneath this spicy, griddled chicken is even more spice... quinoa and bulgur wheat, soaking in a spicy, tasty sauce!

A slice of heaven is what l call this. It's a plantain chocolate cake, served with raspberry mascarpone. Today's challenge @thegfw is the word sweet. This cake has no sugar, no butter, no eggs, no kidding! The sweetness comes from the overripe plantain, and dark chocolate buttons. You really can have your cake and eat it 😀

Hello to legs, the theme of today's @thegfw challenge. Here are two trimmed chicken legs in a Ghana-style chicken stew. It's slow cooked in selim peppers, scotch bonnet, ginger, shallots and a tomato sauce. I love to serve it with plain boiled rice. Is your mouth watering? 😂

It's day 25 of @thegfw challenge and the theme is hero and that is definitely my mother, who l have already mentioned as my inspiration a few days ago when that was the theme.

This is Maya Angelou, an absolute hero of mine too. She was a poet, an author, a dancer, a producer, historian, a playwright, an activist and an incredible mother and a brilliant cook. Her cookbook 'Hallelujah the Welcome Table' is laced with the funniest stories as well as delicious recipes. I enjoy performing her poetry and cooking her 'Smothered Chicken' dish. What a woman!

Day 23 of @thegfw and the challenge is banana brea

Day 23 of @thegfw and the challenge is banana bread. During the first lockdown, I must have the only kitchen that didn't bake banana bread or cake as I'm completely obsessed with banana's cousin, plantain, both from the family genus musai.

In the first lockdown, l made chocolate versions and chewy bars with it and still have black plantains in the freezer waiting for me. Sometimes l even combined banana with plantain for fritters.

This is a savoury version, baked with chilli, onions and ginger. Delicious slathered with peanut butter.

Day 22 of @thegfw challenge and the word is vegetable. Now everyone who knows me, will understand why I've gone for the humble plantain..

This vegetable is an absolute favourite and l ♥️ it 😀. At every stage of ripeness, from green to black, plantain will give you something delicious.

Smoothies, snacks, starters, mains, desserts, tapas-stye entertaining and more. It's an absolute dream for vegans, vegetarians and coeliacs. It steams in 5-8 minutes and that's what l call fast food!

Dice it, spice it, fry it, grill it, steam it, poach it, bake it, roast it... My date with plantain continues.. if you want more on it, checkout my feed!

It's day 21 of @thegfw challenge and the word is staple.

I have gone for one of my very favourite staples, which is rice. I grew up on rice and love all the different ways we cook rice in Ghana.

We have a breakfast porridge made with rice, called 'rice water' and it's simply rice boiled with water, till slightly mushy and then sugar and milk added. When there was any left over, my mum would convert that into a rice pudding, adding butter, eggs and nutmeg... absolutely delicious!!

Sometimes she would cook rice in a lovely stock of salt beef and onions. Another favourite is the queen or rice dishes 😜 colourful jollof rice...

Here my rice is cooked in liquid from boiled hibiscus flowers, a lovely inviting deep purple

So I'm getting cracking for my lunch, which is going to be an omelette. It will be seasoned with a pinch of salt and loads of freshly ground black pepper.

It's day 18 of @thegfw and the word is lockdown. There are so many ways this could go, as a lot has happened and continues to happen. These have been real tough times.
I love photography and have quite a collection so decided to spend some time grouping them. This picture brings happy holiday memories. Now post covid l hope to do a lot of shopping and here are all the bags I'll be needing 🤣.

These have dark chocolate, ripe plantain (surprise surprise) crunchy peanut butter and more...then rolled in choc curls, gold leaf, bronze crunch and freeze dried raspberry. What's not to love... I'm going for who inspires me and without a doubt that has to be my mother ♥️ Her love for life, her family, our friends, her confidence and kindness and couage. Her amazing food, she truly was queen of the kitchen and l know l am who l am today because of her.

Happy Chinese New Year! This was part of an awesome meal I enjoyed in Chinatown which had garlands and red lanterns everywhere for the celebration.

I must add that Ghana serves up some of the tastiest Chinese dishes ever and l knew l wasn't alone in thinking that, when it was mentioned in Vicky Bhogal's cookbook Flavour after her visit to Ghana. The first Chinese restaurant in West Africa was in Ghana and called The Mandarin where the seafood was ocean fresh. My mouth is watering just thinking about it.

Here is an old Betty Crocker cookbook given to my mum by an American friend, who was like a mum to her. I remember thumbing through it as a girl and loving the photography.! The challenge today is recipe. I'm sure l got my love of food photography from this cookbook. Amazing stuff!
