- 2 unripe green mangoes (green skin and hard to the touch)
- 2 garlic cloves, minced
- 2 tbsp rapeseed oil
- Juice of 2 limes
- 1 green chilli, de-seeded and finely chopped
- Salt and freshly ground black pepper to season
- Peel the mango, slice, cut into thin strips and place in a bowl.
- Mix the remaining ingredients and pour over the mango, stir to combine.
- Cover with cling film and refrigerate for an hour before serving.
