Meatloaf

As an AFS exchange student in America, it made my day to come home from school and find my American host mum, Ethel Barker, had made meatloaf for dinner. Here I have added a kick with chillies and an interesting sweetness with plantain.

A recipe from “A Date with Plantain

Ingredients

  • 2 medium onions, finely chopped
  • 2 garlic cloves, minced
  • 225g/8oz minced beef
  • 225g/8oz minced lamb
  • 225g/8oz Sausage meat
  • 1 tbsp tomato puree
  • 1 tbsp Worcester Sauce
  • 1 tsp dried mixed herbs
  • salt and pepper to season
  • 2 green chillies, chopped
  • 14 rashers smoked streaky bacon
  • 1 plantain - ripe - yellow skin
  • oil to shallow fry

Method

  1. Preheat oven to 200°C/fan 180°C/390°F/gas 6.
  2. Sauté the onions and garlic until soft and translucent. Remove from the heat, put into a mixing bowl and leave to cool.
  3. Add the remaining ingredients, except the bacon and plantain, and mix.
  4. Line a loaf tin cross ways with the strips of bacon and add half the meat mix.
  5. Peel the plantain and lay it whole along the length of the tin, then spoon in the remaining meat. Wrap the bacon ends over the top of the loaf and cover with foil.
