Rustic roast veggies with chorizo

A simple and smoky side dish to something meaty or fishy. For vegans or vegetarians just leave out the chorizo!


  • 1 plantain - ripe - yellow skin
  • 1 large sweet potato
  • 1 courgette
  • 3 banana shallots, peeled, halved
  • 2 garlic cloves, crushed
  • 1 dried bay leaf, crushed
  • 2 sprigs rosemary
  • 100g/3½oz chorizo sausage, chopped
  • drizzle of rapeseed oil


  1. Preheat oven to 200°C/fan 180°C/390°F/gas 6
  2. Peel the plantain
  3. Cut the plantain, sweet potato and courgette into wedges and place in a bowl
  4. Add the remaining ingredients, drizzle with the oil and mix together
  5. Roast in a shallow oven proof dish for about 20 minutes until golden and serve
