Ginger & Lime Drink

Ginger and lime are two ingredients I love to cook with, and are a good drink combination. The lime is refreshing and the ginger gives a fiery kick! If you want it light add more lime and if you want it fiery and spicy then add more ginger. Serve over ice on a warm day or try it warm when it’s chilly.

A recipe from “A Plate in the Sun


  • 500ml/18floz water
  • 2 tbsp freshly grated ginger
  • 3 cloves, optional
  • 3-4 tbsp soft light brown sugar
  • Juice from 2 freshly squeezed limes


  1. Add the water, ginger and cloves to the pan and bring to the boil. Add the sugar to taste and simmer on a low heat for 5 minutes. Remove from the heat and add the lime juice. Taste and adjust sweetness if you need to. Strain and add thin slices of lime before serving.
  2. For a more punchy drink just add more grated ginger, boil for a little longer and steep overnight.
