Green Mango Salad

My Recipe


  • 2 unripe green mangoes (green skin and hard to the touch)
  • 2 garlic cloves, minced
  • 2 tbsp rapeseed oil
  • Juice of 2 limes
  • 1 green chilli, de-seeded and finely chopped
  • Salt and freshly ground black pepper to season


  1. Peel the mango, slice, cut into thin strips and place in a bowl.
  2. Mix the remaining ingredients and pour over the mango, stir to combine.
  3. Cover with cling film and refrigerate for an hour before serving.
