As front-of-house and a resident chef at the Novelli Academy how lucky am I to be working with Jean-Christophe, so many top chefs and a fabulous and friendly support team.
I enjoy good food and meeting new people (my husband translates that to eating and talking, he may have a point there).
Courses are run in Jean-Christophe’s charming farmhouse family kitchen. I arrive to the aroma of stocks simmering, biscuits baking and good coffee, and the kitchen buzzing in preparation for the day.
The excitement starts with the arrival, meeting and greeting of the guests, then we settle in for expert guidance and spoonfuls of food heaven.
The day is punctuated with fun and laughter, there’s never a dull moment!

where I get to share some of my most popular dishes. We explore spices and techniques and use readily available ingredients, many of which are becoming commonplace in supermarkets.
